Fall is here! I've always loved the changing of the seasons, and there's so much to do in the Fall. Every year there are a handf...

Fall is here! I've always loved the changing of the seasons, and there's so much to do in the Fall. Every year there are a handful of things I always have to do, but this year i'm going to make an effort to do some new (to me) things.

1. Burn candles- LOTS AND LOTS OF CANDLES. Fall brings a nice crisp chill to the air, and it's nice to have some good smelling candles burning around the house. Bath and Body Works has a great Fall candle that is, don't you know, just perfect for Fall!

2. Apple Orchards. I've never been apple picking and I am definitely going to get there this year!

3. Leaf rubbing. This is something I did as a kid and it brings back such good memories, and I don't know about you, but i've got a kid who will have a blast peeling all the wrappers off of the crayons.

4. Long drives into the mountains to see all of the Aspen trees changing colors. I love scenic road trips!

5. Buy some new scarves. Fall is the perfect time to add a scarf to outfits that you might get chilly in later on in the day. Here's one scarf i'm loving, and another.

6. Make homemade Apple Cider. This recipe is simple and looks delicious!

7. Do a zombie crawl. We have a great one here in Denver, and it's fun for all ages.

8. Rake leaves with the sole intention of jumping in them and throwing them up in the air.

9. Bake lots of homemade bread. I got a bread maker for Christmas and have yet to use it. This pumpkin bread recipe looks amazing!

10. Go to a pumpkin farm and do all of the things. Hayrides, pumpkin picking, playing in corn kernals, corn mazes...woohoo!

The recipe makes enough for a week's worth of dip for Porter and me,

and it's delicious and healthy!

I found this idea on Pinterest (big surprise! ha), and I thought it was such a good idea.

So I made them for P...and they are a HUGE HIT! He loves them, can eat them by himself, and they're so healthy! Even my 4 year old niece loves them.

And the best part? Super easy to make :)

I'm usually a beef hamburger kind of person, but when I was at the store the other day I picked up some ground turkey because I knew Porter could eat that. After getting home, I googled for recipes using ground turkey.

I came across this website, and decided to make that...but with a few changes.

Let me tell you- THIS WAS SOOO GOOD. I should also tell you that I don't cook very often, and when I do, I usually like what I cook, but Jeremy doesn't. HE even loved this, and so did Porter (he ate the pureed version of course).

Italian Turkey Burgers with Honey Mustard Mayo

Ingredients:

20 ounces lean ground turkey

2 tablespoons grated parmesan cheese

1 clove garlic- minced

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1 teaspoon salt

Freshly ground pepper

Hamburger buns

1/3 cup mayo

3 tablespoons honey mustard

Directions:

1. Preheat oven to 350 degrees.

2. Combine ground turkey, cheese and seasonings. Mix well.

3. Shape turkey into 4 patties.

4. Place patties on a greased baking sheet.

5. Bake for about 20-25 minutes, checking to make sure they don't dry out.

6. Combine honey mustard and mayo, mix well.

7. Put burger on bun, put dressing on burger, and EAT!

My friend Carly recently told me about a website she found that had an awesome recipe for teething biscuits. It is seriously so amazing, I wanted to share it with everyone!!
This is the website it is originally from.

What you need:

A slice of bread

Applesauce

Cinnamon

Step 1:

Cut off the crusts of the bread.

Step 2:

Smash the bread until it is pretty flat.

Step 3:

Spread a thin layer of applesauce on the bread.

Step 4:

Sprinkle on some cinnamon.

Step 5:

Roll bread up so that the applesauce and cinnamon are on the inside.

Step 6:

Microwave for about a minute and a half (this hardens the biscuit).

Step 7:

Let cool for a few minutes.

I seriously got up from my computer after reading this recipe to make it...and it is a HIT every time! Porter loves it!

So tonight is my first night home alone with Porter. Jeremy went to Fort Collins to hang out with some friends for the night. I wish I could have gone :( Having to pump all the time def puts a limit on what I can do and how long I can be doing it for. Oh well. Not for much longer...

Porter's been a little extra cranky lately. Saturday I started giving him a bottle of a formula at night- gave him one for the first few days- and now he's getting 2 at night. I'm slowly working it into his feedings until eventually at the end of the month he'll be getting all formula. But anyways, it's making him constipated and he gets upset when he's trying to poop and can't. Guess I can't blame him. He went 30 hours the other day without a BM...that sucks. Apparently it's normal though, and the pedi told me to put a warm washcloth on his belly and do the bicycle with his legs. He doesn't like that too much, but it does help. And on top of the not pooping, he has a little head cold :( Poor guy. I started getting sick and then a day or two later, he did. Pedi says all I can do for that is squirt salt water up his nose to help clear out all the boogs. That's helping, because he actually sounds like he can breath better now.

Yeah, that's snow. Like, 7 inches of it. That's what I woke up to today. Luckily it's sunny every day in Colorado and it all melted today, but still. WTH. It's April! Geez.

Ok so that's pretty much it.

Oh yeah- I will leave you with a recipe that's AWESOME. My mom used to make this when I was growing up and I LOVE it. Whenever I go home to visit I want her to make it. Except NOW I can make it myself :) So I do. And it's delicious. SO TRY IT. Your kids will like it...I did!

Lemon Chicken

1 LB Chicken

3/4 Cup Flour

1 Teaspoon Salt

1 Teaspoon Pepper

1/2 Cup Parmesan Cheese

2 Eggs

1/2 Cup Butter

2 Tablespoons Lemon Juice

2 Tabelspoons Cooking Oil

1. Beat the meat. Haha. I use a coffee cup (because we lack proper kitchen utensils) to flatten the pieces of chicken.

2. Mix flour, salt and pepper in a bowl.

3. Mix eggs and parm cheese in another bowl.

4. Heat oil on a skillet.

5. Dip chicken in flour mixture, covering the chicken with flour. Then dip the chicken in the egg mixture.

6. Cook chicken in skillet for 5 minutes on each side.

7. Melt butter and lemon juice in the microwave.

8. Pour butter mix over chicken.

I usually make rice with it, but you can also make egg noodles instead (that's how my mom makes it).

SO DELICIOUS. And it takes about 15 minutes from start to finish.

BBQ and Potato Skin recipe

Last night we BBQ'ed at our house. Katie, JR and Lily (Jeremy's family) came over, as well as my friend Jamie. So much fun...and it was like, 60 out so it was perfect weather :)

This is what we grilled...except Jeremy burnt a bunch of it. Shoot.

And I made these Potato skins for an appetizer- they turned out AWESOME! I ate 4 halves, haha. DELICIOUS! :) I had posted a pic on Twitter of these and someone asked for the recipe, so here it is:

Ingredients

6 large potatoes

2 teaspoons cooking oil

1 1/2 teaspoon chili powder

2/3 cup crumbled bacon

1 medium tomato

1/2 cup green onion

1 1/2 cup shredded cheddar cheese

1/2 cup sour cream (optional)

1. Preheat oven to 425.

2. Precook potatoes in the microwave for 20 minutes. Rearrange them at 10 minutes through.

3. Wrap potatoes in tin foil and bake for 40-45 minutes. Let cool.

4. Cut potatoes in half and use a spoon to scoop out the white portion of potato. Cover and chill the leftover portion for another use.

5. In a small bowl combine oil and chili powder. Using a pastry brush, brush the inside of the potato halves with the mixture.

6. Place potatoes on a baking sheet. Sprinkle with bacon, tomato, and green onion; top with cheese.

7. Bake about 10 minutes until cheese is melted and potato halves are heated through. Serve with sour cream if desired.

Mint Chocolate Thumbprint Cookies

Ingredients:

2 Ounces Dark Chocolate

2 Ounces Mint Chocolate (I used Mint Truffle Hershey Kisses)

1 1/2 Cup Flour

1/2 Cup Dark Unsweetened Cocoa Powder

3/4 Teaspoon Salt

1 Cup Unsalted Butter, cut into 1 inch cubes, room temperature

1/2 Cup Granulated Sugar

2 Tablespoons Dark Brown Sugar

2 Large Egg Yolks

1 Teaspoon Vanilla Extract

1 Cup Coarse Sugar for rolling

3 Ounces White Chocolate, coarsely chopped

3 Tablespoons Heavy Cream

1/2 Teaspoon Pure Peppermint Extract

Makes 25-30 Cookies. I doubled the recipe and made twice that.

Instructions:

1. Melt the dark chocolate and the mint chocolate together in a microwave or over a double boiler. Whisk until smooth, then set aside to cool.

2. In a medium bowl, whisk together the flour, cocoa powder, and salt. Set aside.

3. In the bowl of a standing mixer fitted with the paddle attachment (make sure you use a standing mixer, a handheld one will not be able to mix the dough because it ends up VERY thick!) , beat the butter until creamy. Add the granulated and brown sugars and beat on medium-high speed until light and fluffy, about 3 minutes. Add the egg yolks and vanilla and beat again until combined. Scrape the chocolate into the mixer and beat just until incorporated. Scrape down the sides and bottom of the bowl and add the flour mixture all at once. Beat on low speed, scraping the side of the bowl occasionally, until the dough is smooth.

4. Transfer it to a sheet of plastic wrap and pat it into a disk; wrap and refrigerate it until it is chilled and firm, at least 30 minutes.

Note: May be made ahead of time and refrigerated up to 24 hours.

5. Preheat oven to 350 degrees F and grease 2 baking sheets.

6. Pour the coarse sugar into a shallow bowl, and with clean hands, form tablespoon size dough balls, taking care that they have no lumps or cracks. Roll each ball in the coarse sugar and place it on a prepared baking sheet. Use your thumb or a small dowel (I used the end of a whisk) to make an indentation in the center of the cookie.

7. Bake for 10 minutes, remove the sheet from the oven, and use your thumb or the dowel to make the indentation more visible. Return the sheets to the oven and bake for another 4-5 minutes. (These are the type of cookies that can overbake very quickly- pull them out at the first signs of cracking.)

8. Set the baking sheets on a wire rack to cool for 5 minutes. Use a spatula to transfer the cookies to the rack to cool completely before filling them.

9. Place the white chocolate in a glass measuring cup with a pour spout. Put the cream in a microwave-safe bowl or cup and microwave it on high power until it boils, about 40 seconds. Pour the hot cream over the white chocolate and let stand for 30 seconds, then whisk until smooth. Stir in the peppermint extract. Fill the thumbprint cookies with the white chocolate ganache and refrigerate them until set, about 30 minutes.

GOOD STUFF! They aren't very sweet cookies, but good :) And they look awesome!

I'm feeling MUCH better today. My mouth isn't really sore anymore, but I still can't eat too much on that side of my mouth yet. Speaking of eating, I made this really awesome Crock Pot Chicken today...i'll post the recipe in a few.

Had a pretty productive day. I went with Lily, Katie and Laura Lee to this Halloween thing that Evergreen hosted for kids. It was in this museum a few mins from my house. Each room had different stuff...crafts, snacks, and spooky movies. So many little kids in cute costumes :)

I did my hair today, haha (still kinda wet in this pic). I love french braids.

Now I will go watch some String Cheese Incident live on iclips with my bf :) Wish we could be there instead of watching it on tv (but I suppose our 73 inch tv is probably the next best thing anyways...)

Crock Pot Chicken

SOOOO delicious, let me tell you! And super easy (perfect for me! haha).

Ingredients:

4 boneless chicken breasts

White onion

8oz package of cream cheese

1 can black beans

1 can corn

Chili powder

Cilantro

Fajita Seasoning

15oz jar of salsa

1. Put frozen chicken breasts into crock pot.

2. Chop 1/4 of onion.

3. Mix into crock pot corn (drained), black beans (drained), salsa, onion, fajita seasoning, chili powder and cilantro. I don't really measure things often, so I just threw in the seasonings.

4. Cook for 4-5 hours on high.

5. Take out chicken and shred it, then mix back into crock pot.

6. Put cream cheese on top.

7. Cook for another 20 minutes.

8. Stir and serve :)

I also made rice and ended up using the crock pot chicken for burritos. SO DELICIOUS, and plenty for leftovers :) You could also not shred the chicken and just put each breast over rice and spoon the mixture from the crock pot over the top.

Such a easy recipe and makes your house smell goooood all day :)
